Porto Wine Chocolate Cake: healthy, super moist, rich and delicious!

DRY INGREDIENTS

  • 1 cup of raw cacao powder

  • ½ tsp sea salt

  • 1tsp coffee powder

 

WET INGREDIENTS

  • 6 tablespoons coconut oil or ghee

  • 6 eggs

  • 1/3 cup maple syrup or coconut sugar.

  • 2 tbs oporto wine (optional)

INSTRUCTIONS

  1. Preheat the oven to 300 degrees fahrenheit.

  2. Butter the bottom and sides of a 9-inch springform pan. You can also use parchment paper for easy removal.

  3. Fill a pot with about 4 inches of water to create a double boiler to melt the chocolate. Add the chocolate and butter to a large bowl and melt over the double -boiler. It should be completely melted and silky when you stir it. Remove the bowl from the double -boiler and let cool to room temperature.

  4. While the chocolate is cooling, separate 6 eggs. Whip up the egg whites  for a lighter more fluffier cake. Slowly add the maple syrup while beating, about one tablespoon at a time, until fully incorporated. Set aside.

  5. To the melted chocolate, now at room temperature add the egg yolks and coffee powder and the porto wine ( it really gives an edge to the cake) and stir together.

  6. Add 1/4 of the egg whites to the chocolate, then stir to combine. Pour in another 1/4 of egg whites, it lightens the mixture. Gently fold in the remaining egg whites in the mixture, don’t over fold, otherwise, the egg whites deflate and that's what gives the structure to the cake. Cut down through the center and up around the sides of the bowl to gentle incorporate the egg whites into the chocolate mixture.

  7.  Pour the batter in the springform pan and bake it for 20 minutes.The cake should be at the top of the pan when you remove it from the oven but it will instantly start to deflate once it cools. You also get cracks on top of the cake but it brings character to the cake.

  8. Let the cake cool completely, then remove from the spring pan.

  9. By the time you serve it, sprinkle with cacao powder or some berries. It's light, rich, healthy and delicious.

 

My tips

  • If you have a sweet tooth, you can add more maple syrup.

  • Also, if you like the cake to be drier just add some more cooking time. (5 minutes). Or if you are not at sea level, you need an extra 5 minutes of cooking time.

  • If you don’t have porto wine, the cake is still delicious!
